Makes 15-20

3 large eggs

2 cups flour

1 ¼ cups sugar

2 tspn baking soda

2 tspn cinnamon

½ tspn salt

2 cups grated carrot

½ cup raisins

½ cup chopped walnuts

½ cup shredded coconut

1 apple, peeled, cored and grated

1 cup vegetable oil

1 tspn vanilla essence

Into a large bowl, sift together the flour, sugar, baking soda, cinnamon and salt.

Stir in the grated carrot, raisins, walnuts, coconut and grated apple.

In a bowl, beat the eggs with the oil and vanilla essence. Stir into the flour mixture until the batter is just combined.

Spoon the batter into well buttered muffin tins, filling to the top. Bake at 180 degrees for 25 minutes.
