Ingredients: 2 ½ c flour 1 ½ c sugar 2 t baking soda ¼ c cocoa mixed with ¾ c boiling water and ¾ c cold water 2 t vanilla essence 2 T cider vinegar or lemon juice ¾ c oil 2 eggs
In a large mixing bowl, combine the flour, sugar and baking soda.
Mix together the cocoa and water with the other liquid ingredients and the eggs.
Stir the liquid ingredients into the dry ingredients. Pour the batter into two 20cm round baking tins.
Bake at 170 degrees celcius for about 35-40 minutes.
When cool, dust with icing sugar or ice with chocolate icing.
To make icing place 1c of icing sugar, 1T cocoa and 2t butter in a small mixing bowl.
Add 1T boiling water and mix until all ingredients are combined and the icing is smooth.
